Cote de Boeuf: Das Prunkstück für wahre Steak-Liebhaber

Das Cote de Boeuf, in Deutschland auch liebevoll Ochsenkotelett oder Rinderkotelett genannt, ist die französische Antwort auf das amerikanische Ribeye am Knochen. Es wird aus dem vorderen Teil des Rinderrückens, der sogenannten Hohen Rippe, geschnitten.

Dieses Steak ist ein echtes Statement: Es vereint das Beste eines klassischen Entrecôtes mit der aromatischen Kraft des Knochens. Dank der ausgeprägten Marmorierung und des markanten Fettauges (Ribeye) bleibt das Fleisch beim Garen extrem mürbe und saftig.

 

Was macht unser Cote de Boeuf so besonders?

  • Qualität von der Färse: Wir verwenden bevorzugt Fleisch von Bio-Färsen (weibliche Tiere, die noch nicht gekalbt haben). Das Fleisch der Färse zeichnet sich durch feinere Muskelfasern und eine überdurchschnittlich gute Marmorierung aus – für einen Geschmack, der sprichwörtlich auf der Zunge zergeht.

  • Dry-Aging (Trockenreifung): Ein echtes Cote de Boeuf braucht Zeit. Unser Fleisch reift kontrolliert 14 bis 28 Tage am Knochen. Während dieser Reifephase verdunstet Feuchtigkeit, was das Aroma konzentriert und eine edle, butterzarte Textur mit leicht nussigen Röstaromen erzeugt.

  • Knochenaroma: Der eingewachsene Rippenknochen schützt das Fleisch beim Braten vor dem Austrocknen und gibt während der Zubereitung intensive Geschmacksstoffe direkt an den Kern ab.

 

Zubereitung: Die Masterclass für Pfanne & Grill

Ob in der gusseisernen Pfanne oder auf dem Holzkohlegrill – ein Steak dieser Güte verdient Aufmerksamkeit. Da das Cote de Boeuf meist ca. 0,5 kg wiegt, empfehlen wir das Rückwärtsgaren:

Vorbereiten: Das Steak ca. 1 Stunde vor dem Garen aus der Kühlung nehmen, um Zimmertemperatur zu erreichen.

Scharf anbraten: In einer heißen Pfanne oder direkt über der Glut 2–3 Minuten pro Seite kräftig anbraten, bis eine karamellartige Kruste entsteht.

Sanft garen: Das Steak in die indirekte Grillzone oder bei ca. 100 °C in den Backofen legen. Nutzen Sie ein Fleischthermometer!

Ruhen lassen: Bei Erreichen der Zieltemperatur das Fleisch 5–10 Minuten ruhen lassen (wichtig: Säfte setzen sich).

This is the second Michael Kors bag in my collection, and I’m pleased with both of them. These are quality items that are timeless and complement pretty much everything that i own. At first, i thought that this was a travel bag in the sense that you would put toiletries in it, but it’s intended to be a smaller crossbody bag that you can travel with. It’s meant to hold essential items and look quite stylish while doing so. I chose this color since my luggage set and toiletry bags are all cream and brown. Classic, chic, elegant and sophisticated without screaming that this is a designer bag. This comes packaged beautifully and carefully so that it’s protected. The strap is adjustable on both sides. The bag lives up to Michael Kors quality and is worth every penny. I need a matching wallet or wristlet NOW. Highly recommended if you appreciate designer products that have a higher price point but will last for years and always be in style.
