Cooking with lavender in recent years has become quite popular. There are a few tricks to cooking with lavender; the first is to use the right varietal. We rely on an English lavender varietal - when used sparingly, it works well with sweets, meats, vegetables and in drinks. Any recipe using thyme or rosemary generally works well with lavender. Similar to rosemary, if one uses too much, the taste will be over powering.

Herbes de Provence (includes Culinary Lavender)

The very popular French traditional herb combination that should be in every cook's kitchen. Works perfectly in various recipes for chicken, pork, beef, savoury sauces, salads and salad dressings.

Ingredients: Rosemary, Thyme, Marjoram, Summer Savory, 
English Culinary Lavender and Mint.

Smoked Pepper with Lavender

40 g.  (glass jars)

Great with meats and vegetables, in sauces and marinades, or when grilling.  This is great with fish, chicken, meats.  But also toss in salads and use with roasted vegetables.

Make a great dip by mixing a pinch of the smoked pepper and pepper with whipped cream cheese.
