本款以精米步合70%的秋津穗進行試驗性釀造，嘗試用不同的方式呈現「秋津穗657」的風格。酒藏一直認為精米步合並沒有絕對的好壞，而是透過數字來表現土地的能量與風味層次，這也是「風之森」系列的一大特色。本次因應米價上升，特別挑戰以70%精米步合來重新詮釋657。
相比平常的657版本，這款酒口感更飽滿、層次更豐富。同時依然保留了類似洋梨和青蘋果的清新香氣，帶有透明感之餘，也多了一點複雜度，風格依舊很有「風之森」的特色。
未來秋津穗657的規格不會改變。這次只是相差5%精米步合的試驗版本，推薦可以和原版一起試飲，感受當中的細微差別。
