Six Questions Your Bruster's Real Ice Cream Franchise Financial Model Must Answer

We built this franchise unit financial model using our own research on premium dessert concepts, pre-populating it with data like the $40,000 franchise fee and $120,000 production equipment costs. All assumptions, from the $880,000 Year 1 revenue to the 5% royalty and 3% marketing fund, are fully editable to match your specific territory and local labor rates.

When does the unit reach profitability?

The unit hits its stride quickly, reaching break-even by April 2026, just four months after the January start. While Year 1 EBITDA is a healthy $320,000, true profitability depends on managing the 14.5% food cost and the ramp-up of catering orders, which are projected to hit $60,000 in the first partial year.

Improve Unit Profitability

  • Maximize high-margin sundaes
  • Optimize shift lead scheduling
  • Grow catering contracts
[dynamic_pic9]

How much capital is required?

You will need approximately $670,000 to get the doors open, covering everything from the $40,000 initial fee to the $45,000 mobile pop-up vehicle. Most of your capital goes into the $250,000 leasehold improvements and $120,000 in specialized ice cream production equipment.

Major Capital Uses

  • Leasehold improvements: $250,000
  • Production equipment: $120,000
  • Display cases: $80,000
  • Franchise fee: $40,000
[dynamic_pic10]

What is the expected return?

The model shows an Internal Rate of Return (IRR) of 3.79% and a Return on Equity (ROE) of 1.75 over the five-year period. With a 4-year payback period, this is a long-term play that relies on the steady climb of revenue from $880,000 to $1.87M to drive investor value.

Key Investment Metrics

  • IRR: 3.79%
  • Payback period: 4 years
  • Year 5 EBITDA: $790,000
[dynamic_pic11]

What is the break-even point?

Break-even occurs in April 2026, driven primarily by the volume of ice cream scoops and sundaes sold at the walk-up window. To hit this point faster, you must manage the $11,000 monthly fixed costs and ensure labor doesn't exceed the planned 3.5 crew members during the initial ramp.

Levers for Break-Even

  • Increase average ticket
  • Control packaging waste
  • Boost mobile sales
[dynamic_pic12]

What is the cash runway?

Your lowest cash point is $583,000 in April 2026, which is why having a solid capital cushion is vital. If construction delays push your opening past April, you'll defintely need extra working capital to cover the $6,000 monthly rent and $1,300 in insurance and utilities.

Protect Your Cash

  • Phase equipment purchases
  • Negotiate rent abatement
  • Use part-time crew
[dynamic_pic13]

How do different scenarios look?

High-performance scenarios assume you hit the $303,750 catering target by Year 5, which significantly boosts the 3.79% IRR. Low scenarios, where revenue lags by 15%, could push the 4-year payback out further, making local marketing execution and school fundraising partnerships critical.

Hit the High Case

  • Targeted social ads
  • School fundraising nights
  • Corporate catering outreach

Simplicity
Color: Black/Orange
This watch was received exactly as advertised. First off the watch is economical compared to other watches that advertise the same details. I will say that I have gone through numerous Luminox watches only to be disappointed. This watch fits the bill. It does have solar cells which mean it needs to be exposed to light to keep running, not a problem. Three minutes under my surefire light I am golden. The bezel doesn't rotate actually no big deal for me. I have always required that the bezel moves not anymore after having a bezel that rotates I use it next to never. Here's why, the more I rotate the bezel the more the numbers wear off. The strap on the watch with the catches for the strap are perfect. They actually hold the watch strap in place in lieu of like other big name brands that just flop and slide. As far as everyday use goes this watch is my go to. To be honest I have purchased three. This is the only watch I will wear moving forward, yeah the glass my scratch but even the big names like the Luminox I spoke of earlier scratches too.

Real men wear pink!
Bought for hubby and he's happy! Not a bubblegum pink but a more subtle shade. Pale rose, kind of. Flattering fit, too.

True to size, and looks exactly as pictured
What you see is what you get. The picture is accurate, and the sizing is right. I ordered a size 3XL and it is accurately a size 3XL. The shirt material is a nice thickness without being see thru but also not being too thick. The pattern and color makes it forgiving on sweat when you do sweat. It is the wicking style of clothing. The collar is denser/thicker/reinforced more than many polo styled shirts so the color pops up more than thinner shirts. The stitching and material are quality too. The interior tag has a spare button and it says designed in Italy. The amazon page says it is made in China. I am actually kind of surprised at the price, and the fact that it is made in China. I held my breath a little and assumed it would be much lower quality. I was happy to find out that this is a nice, solid shirt. For gift giving purposes, I am giving this one star lower. For personal purposes, it is definitely 5 star. The reason I give it 4 stars is because the shirt comes in a sort of crappy clear box which is easily smashed in transit and quite frankly looks really cheap when you gift it, in my opinion. It says new on the sticker, made in china, but I would absolutely take it out of the box if you gift it. Also, there isn't a price tag or any kind of removable tag on the shirt at all. So, if I take it out of the box, and wrap it separately it doesn't have the ''hey, this is a new item tag.''

Comfortable and Stylish Polo Shirt for Any Occasion
I recently tried out the J.VER Men's Polo Shirt, and I’m really happy with the fit, feel, and overall look of the shirt. The fabric is a great combination of polyester and spandex, making it stretch just enough to feel comfortable while still offering a flattering fit. The material is lightweight yet durable, which makes it perfect for the warmer months. It’s breathable and quick-drying, so it keeps me cool even when I’m outdoors or active. Whether I’m out on the golf course or just relaxing, this polo feels great to wear. One of the things I like most about this shirt is how versatile it is. The classic design makes it suitable for both casual and more formal settings. I’ve worn it to a couple of casual business meetings, and it’s comfortable enough for a day of golf or a weekend outing. The collar is solid, with a nice touch of style thanks to the subtle pattern, and it holds its shape well after multiple washes. It’s not too stiff, so it feels natural around the neck, but it still maintains a neat, structured look. Another thing worth mentioning is the fit. The shirt fits true to size, and it has just the right amount of stretch. It’s not too tight or too loose, and the length is perfect for wearing tucked in or left out. I’ve tried other polos in the past that either feel too boxy or too clingy, but this one strikes a nice balance. It’s flattering without feeling restrictive. The side split design also adds to its comfort and flexibility, especially when I’m moving around or swinging a club. All in all, I’m very happy with this polo shirt. It’s stylish, comfortable, and functional. I appreciate the thoughtful design and quality of the material, which has held up well so far. This is a great addition to my wardrobe, and I can see myself wearing it for a variety of occasions. Whether you’re looking for a shirt for outdoor activities or something that works for both business and casual wear, this polo is a solid choice.

Fits nicely
I always prefer a dry fit shirt, because of the way it fits me, and falls on my frame. I find this shirt nicely tailored, and flattering for my body type. Just to give you a little perspective, I am 5 foot 11 and 195 lbs, with a muscular build. I chose the size large, and I find it fits me very well. I don't like shirts to look like they're painted on, and I want a little bit of looseness for comfort. I also like a shirt that is made from comfortable good breathing material, and this one checks all of those boxes. The large is not loose on me by any means, but it is a nice size for my frame. It's neither too loose, nor too tight, and straddles that Goldilocks sizing zone. The blue has a very nice look to it, with a little bit of black thread incorporated as well. So, it has this subtle two tone look to it throughout. The collar inlay has a different design pattern, which is also very nice. I could certainly see this shirt being a great golf shirt, and one that is flexible to accommodate my swing. All in all, I'm very happy with it, find it stylish, and would comfortably recommend it. The only thing I would mention, is that it did have a scent of what to me smelled like new car smell. It smells like that new fabric, when you sit in a car in the showroom. I suspect that'll go away with a wash or two, so it's not a big deal, neither is it off putting.
