Once among the most prized of spices in the world, grains of paradise are experiencing a culinary resurgence as cultivation practices make them more acceessable (and affordable) to western chefs. 

The grains are about half the size of black pepper and they are used whole or grinded to add heat, floral and citrus flavors to stews. Or grind sparingly over poultry prior to sauteeing over medium or high heat.

Grains of Paradise provide a unique, fresh flavor that can elevate good dishes to extradordinary dishes. However, be careful not to over-season because this spice is so strong and so distinctive it can easily dominate other flavors.

These are grown in southern Ethiop0ia by a cooperative of farmers. They grow in pods similar to cardamom.

COOKING

• Grind and add to a variety of dishes late in the looking cycle
• Sprinkle a light handful whole into stews and soups 
• Add whole to pan just before saute
• Grind and add sparingly to baked goods such as banana bread or brownies
• Pairs well with: Red chili peppers, turmeric, cinnamon, cloves
