Artisan Cave-Aged
OLD GERMAN WEISSA KASE

Old German Weissa Kase is a raw, cow milk, semi-soft, washed curd cheese with a smooth texture and a buttery, creamy taste.  A true all-natural, artisanal cheese, Old German Weissa Kase in Pennsylvania Dutch translates to “white cheese” and is the typical household cheese of local Amish families. This farmstead, hand-made cheese is produced from a traditional German-Swiss recipe which gives it a long, silky finish. Old German Weissa Kase is an incredibly versatile cheese that is great on sandwiches yet is also a hit as a snack cheese on crackers and can still serve well on a cheese plate.  This cheese is perfect whenever a soft buttery taste is required with a creamy-smooth texture.

Also produced in 40 lb blocks, Old German Weissa Kase is aged for 6 months in order to round out the taste profile. This cheese is great in casseroles and adds dimension to lettuce salads. Due to the semi-soft texture, it also makes a great base for cheese logs.  This cheese pairs well with various sweets and jellies such as apple butter, honey, and Amish preserves. Berries bring out other taste dimensions of Old German, as do crisp fruits, sweet white wines, Belgium wheat beers and German pilsners.

Texture → A medium-bodied cheese with a smooth, creaminess
Flavor → Cream and butter with a touch of tang and a long silky finish
Aged → 6 months
Milk Type → Cow
Shelf Life → 3 months
Presentation → 4 oz block, 8 oz block, and 5 lb loaf; vacuum sealed

The milk for this cheese is produced on the Esh family farm located in the Nittany Valley of central Pennsylvania.  The Eshes are proud of both their farmstead and the care that they give each individual animal. A large emphasis is put on cow comfort and providing a natural environment for the cows.

Please note that shipping on our cheeses includes ice, insulation & shipping cost to preserve the quality of the cheese. Also, our bulk items do not have a uniform weight. The weights will not be exactly as stated and vary slightly (some will be over, some will be under).
