Hand harvested and sorted, the grapes are fermented with native yeasts, partially destemmed, and gently worked, then aged 16 months in oak before being bottled unfined and unfiltered. Roumier’s two Bonnes-Mares parcels—one higher on chalk-rich soils, one lower with more clay—are vinified separately and blended to combine lifted aromatics and minerality with structure and depth.
