preparation
- Our brisket is delivered frozen – we recommend thawing it gently in the refrigerator for one day before cooking.
- Preheat the oven, grill (indirect heat) or smoker to 130°C.
- Remove the brisket from the vacuum bag and wrap it in butcher paper with a piece of Wagyu fat.
- Warm in the oven for approximately 90 minutes.
- Carefully unwrap the brisket from the paper and, after letting it rest for 5 minutes, cut it into strips.
