Voortreffelijk met gegrilde vis, wit vlees zoals konijn en mooi, gemarmerd, rood vlees. Ook fantastisch bij medium tot sterk gerijpte kazen.

Klimaat

Bardolino/Custoza hebben een warm zeeklimaat. Het wordt gekenmerkt door frisse, relatief droge winters en warme, relatief natte zomers.

Ondergrond

De morene heuvels ten zuiden van het Gardameer. Glaciale afzettingen die vooral uit krijt, kalk en stenen bestaan. Hoogte wijngaard: 150-200m.

Vinificatie

Manuele en strenge pluk. Eens ontsteelt en geperst ondergaan de druiven een koude maceratie van enkele dagen op inox. Daarna volgt de fermentatie in aanwezigheid van de pelletjes met dagelijks vermenging. Enkel een deel van de Garganega verblijft op amfora voor minstens 6 maanden. De rest gescheiden op inox met batonnage. Op het einde wordt de definitieve blend gemaakt en gaat de wijn nog 6 maand op fles verder rijpen.
