De Rennina 2019 toont aroma’s van kers, braam, mediterrane kruiden, ceder en florale nuances. De wijn is elegant gestructureerd, met rijp rood fruit, levendige zuren en verfijnde tannines. De afdronk is lang, aromatisch en zuiver.
Vinificatie.
De druiven worden in meerdere passages met de hand geoogst. Na een zachte fermentatie op staal met gecontroleerde extractie ondergaat de wijn malolactische gisting in hout. Hij rijpt 24–30 maanden in grote Slavonische foeders, aangevuld met een beperkte hoeveelheid barrique voor extra finesse. Tot slot volgt 6–12 maanden flesrijping, wat de elegantie en aromatische definitie versterkt.
Het domein.
Pieve Santa Restituta is gebouwd op eeuwenoude wijngaardgronden en werd door Gaja vanaf 1994 volledig in ere hersteld.
Duurzaamheid staat centraal: biologische werkwijzen, herstel van bodemstructuur, bescherming van olijfgaarden en minimalisering van waterverbruik. De focus ligt op pure Sangiovese en maximale terroirexpressie. Rennina is de elegantste wijn van het domein.
