Il Rosso di Montalcino DOC, di Castello Banfi, matura per almeno dieci mesi parte in barrique, parte in botti grandi. Si completa con un affinamento in bottiglia di sei mesi. Offre anche un discreto specchio di bevibilità.
Può anche essere sorseggiato a tutto pasto con completi menu della cucina di terra. È ottimo con il risotto alla carne.
