Dopo la raccolta manuale, l'uva diraspata rimane 12 ore a contatto con le proprie bucce in modo da effettuare una criomacerazione, utile all’esaltazione dei profumi. Il vino ottenuto rimarrà sulle proprie fecce fini in affinamento per almeno 10 mesi.
