In de wijngaard: Druiven volledig ontsteelt voor de maceratie. Spontane fermentatie op inox. 12 maanden rijping op oude houten vaten. Gebotteld op 12 mei 2023. Ongefilterd, 15ppm So2 toegeboegd bij de entonnage van de wijn.

De Japanse Kohki Iwata verruilde in 2008 het Japanse Osaka voor de Zuid-Franse wijngaarden. Na enkele jaren aan ervaring in vin nature bars in Osaka, vertrok hij naar Frankrijk om ook het wijnmakers aspect te ervaren. Hij begon direct met verschillende stage bij bekende wijnmakers zoals bijvoorbeeld Olivier Cousin (Anjou) en Jean Foillard (Beaujolais). 

Vervolgens werkte hij vanaf 2010 vier jaar in le Caves Augé in Parijs en in 2015 voor Domaines des Soulié in Saint Chinian, een wijnhuis dat al sinds 1960 volledig biologisch werkt en dat over een indrukwekkende 27ha, zichzelf volledig kan voorzien in groene energie. Indrukwekkend indeed. 

Kohki vestigde zich samen met zijn vrouw in het nabijgelegen Assignan, waarbij hij nog enkele tijd bij des Soulié werkte maar als snel in 2016 begon met het maken van zijn eigen wijn. Gezien het enorme oppervlak van les Soulié kon hij daar zijn druiven kopen en met wat financiele hulp van een Japanse bedrijf was de eerste vintage in 2017 echt daar. Onder de naam WA Sud weet hij wijnen pur jus te creëren. Schone terroirwijnen met een hoog glou glou gehalte. Laag in kwantiteit, hoog in kwaliteit. Pas net begonnen, maar zeer belovend. Roeien met de riemen die je hebt, kan heel goed uitpakken.
