Deze droge sherry van 15 jaar oud wordt geproduceerd in Amerikaanse eikenhouten vaten via een oxidatief rijpingsproces. Met een alcoholpercentage van 19% en gemaakt van 100% palomino-druiven, biedt deze sherry een unieke en complexe smaakervaring.

De most van de palomino-druif wordt versterkt tot 18% alcohol. Vanaf dit moment begint de rijping in 500 liter Amerikaanse eikenhouten vaten via oxidatie. Gedurende de rijping wordt de wijn voortdurend blootgesteld aan lucht, waardoor het oxidatieproces langzaam maar gestaag plaatsvindt in het systeem van criaderas en soleras.

Door de langzame verdamping van water uit de wijn tijdens de 15-jarige rijpingsperiode, concentreert de wijn zich. Dit bevordert de ontwikkeling van de typische structuur en complexiteit die kenmerkend zijn voor Oloroso-sherry.
