De druiven voor de Valpolicella worden met de hand geoogst, geperst en gefermenteerd in roestvrijstalen tanks. Na een maceratie van ongeveer 15 dagen rust de wijn tot januari

De Valpolicella Ripasso Classico Superiore van wijndomein Gorgo is een complexe, volle rode wijn met diepgang en verfijning. Deze wijn wordt gemaakt door een unieke methode waarbij de basiswijn van Valpolicella een tweede fermentatie ondergaat op de perskoek van Amarone-wijnen. De druiven voor de Valpolicella worden met de hand geoogst, geperst en gefermenteerd in roestvrijstalen tanks. Na een maceratie van ongeveer 15 dagen rust de wijn tot januari of februari, wanneer de perskoek van de Amarone beschikbaar komt.

Tijdens de tweede maceratie op deze perskoek wint de wijn aan concentratie, structuur en complexiteit. De wijn rijpt vervolgens in grote houten foeders van 5000 liter, wat bijdraagt aan een harmonieuze, rijpe en ronde textuur zonder de frisse zuren en levendigheid te verliezen.

In de neus biedt de Valpolicella Ripasso een uitnodigend aroma van vers en gekonfijt rood en zwart fruit, zoals kersen en pruimen, aangevuld met subtiele hints van zoete specerijen zoals peper en kaneel. In de mond ervaar je direct een vollere body met stevige, doch verfijnde tannines en sappige zuren. De lange en evenwichtige afdronk getuigt van het nauwgezette werk in de wijngaard en het geduld in de wijnkelder.

Deze wijn is ideaal bij rijke vleesgerechten, stoofpotten en gerijpte kazen, maar kan ook uitstekend op zichzelf worden genoten om zijn gelaagdheid en karakter te waarderen.

So, as other reviewers make clear, this is very similar to Pack Darling and The Beta. It’s much closer aligned with The Beta, in plot and maybe more like Pack Darling with characters. That being said, I don’t hate this…..but it wasn’t great either. It’s both books mentioned but just….less. Less angst, less emotion, less feeling. The plot feels very half fleshed out, and the “bad guy” feels underwhelming. I didn’t really feel any real emotions from and of the male leads, except maybe Oliver. The others fell sorta flat for me. And Mika makes herself out to be this big bad ass straight outta training and then we never see it from here again with the one fitting room incident as the exception. SPOILER: The whole, “Oh, I’m actually probably an Omega, but I don’t wanna be but I do actually wanna be but no one can ever know my secret that I do nothing to hide “ thing fell so flat. She never commutes to believing she was secretly an omega, but also mentions her “secret” a lot. It just felt so manufactured. I’m intrigued enough to read part 2 and see how the author closes everything out, but this is not one I’ll recommend or ever come back to.
