Deze extra vierge olijfolie behoort tot de veelzijdige basisingrediënten en geeft diepte aan dressings, reducties en zowel koude als warme gerechten. Olijfolie uit Zuid-Frankrijk is hier zeldzaam, omdat deze slechts in kleine hoeveelheden wordt geproduceerd. Deze AOC-olijfolie (beschermde oorsprongsbenaming) uit de Vallée des Baux wordt gewonnen uit de variëteiten Salonenque, Beruguette (Aglandau), Grossane, Picholine en Verdale en op traditionele wijze verwerkt. Hiervoor rijpen de olijven na de oogst nog 2 dagen onder luchtdichte omstandigheden, voordat ze worden verwerkt tot een homogene pasta, waaruit vervolgens de uitzonderlijke olijfolie met zeer milde, rijpe aroma's wordt gewonnen. Past goed bij salades en geitenkaas of warme mediterrane gerechten met tomaten, paprika, aubergines, ansjovis en erg lekker bij rauwe vis.
