A homage to the Australian wine pioneers who paved the way for premium Australian drinks, Nova is matured exclusively in hand-selected Australian red wine barrels, sourced within hours of being emptied and wet-filled with new make spirit to capture the full influence of the wine. The result is a whisky that is unmistakably, unapologetically Australian — fruit-forward, richly textured, and unlike anything produced anywhere else in the world. Appearance

Red ochre with warm amber depth — the distinctive colour of a whisky shaped entirely by Australian red wine barrels.

Aroma

Bold and inviting — red berries, dark chocolate, and orchard fruit lead a nose that draws directly from the South Australian Shiraz and Australian red wine barrels in which Nova is matured. Rich, expressive, and immediately distinctive.

Palate

Rich chocolate raspberry pudding covered in vanilla, caramel, and spice — a balanced combination of sweetness and savouriness that reflects the wine barrel’s deep integration into the spirit. Bursting with red berries, chocolate, and soft oak spice, the palate is generous and layered without ever losing its elegance.

Finish

Bright red fruit is gradually accompanied by a touch of oak, leading to a soft, long, and tannic finish reminiscent of Australia’s finest red wines. Lingering and deeply satisfying.
