Tasting Notes: This 2024 Wild Ferment Riesling highlights controlled chaos and natural fermentation by allowing indigenous yeasts to lead the process. This allows us to capture a raw, unscripted snapshot of the Niagara terroir; but the true soul of this vintage lies in the rare inclusion of 20% Botrytis-affected fruit. 

This wine holds a beautiful consistency of style, where the use of wild indigenous yeast creates a highly expressive and aromatic identity. On the nose, the wine displays vibrant notes of tropical and stone fruit and bold layers of pineapple, sun-ripened peaches, and the essential crispness of green apple.

While the wild fermentation ensures a crisp, mineral-driven acidity, the Botrytis inclusion provides a unique weight to the mid-palate. This dehydration of the grapes on the vine concentrates the acids and sugars, resulting in a multi-level mouthfeel. You’ll find concentrated flavours of sour candy pineapple and cantaloupe, including delicate hints of jasmine tea. While the palate maintains a refreshing, crisp acidity and distinct minerality, the noble rot influence provides a signature, refreshing beeswax mouthfeel and a dry finish that lingers beautifully.

Food Pairings: This wine creates an excellent pairing for calamari risotto.
