Manually harvested in 15 kg baskets, whole bunch pressed. Pressed together and co-fermented in old oak foudre. All indigenous yeasts, ambient ferment. Bottled with addition of a small amount of sugar (8g), with a second fermentation in bottle. No filtration, no fining, no sulphur added and no disgorgement.
