Het creëren van een van de beste Pinot Noir-wijnen van Frankrijk. En het is slechts een kwestie van tijd voordat hij dit waarmaakt.

Twee jaar geleden, tijdens het instellen van de persmachine, ging er iets mis. De druiven werden te zacht en te kort geperst, wat resulteerde in een onverwacht resultaat: rosésap. Waar anderen misschien verder zouden persen, proefde Hervé het sap en was meteen verkocht. Zo werd Oeil de Perdrix geboren.

Deze rosé is als geen andere: diep van smaak, rijk, vol en vet. Het is een gastronomische rosé die perfect is om bij te eten, ver verwijderd van de alledaagse borrelrosés.
